Marinated Portabella Mushrooms

I've heard Marinated Portabella (aka portobollo) Mushrooms compared to tender fillet mignons when prepared by the following method: Start with 5 to 6 large Portabella mushrooms. (Yes, they are available in most grocery stores.) Slice and sautй mushrooms in a small amount of olive oil until tender. Remove from heat and set aside.
In a small bowl, combine 3/4 cup extra virgin olive oil, juice of 2 limes, 2 cloves of minced garlic, 3-Tablespoons chopped parsley, 2 chopped shallots, salt and pepper (about 1/4 teaspoon of each).
Arrange cooked mushrooms evenly in one or two layers in a shallow baking dish. Pour sauce mixture over top. Refrigerate overnight. Remove from refrigerator in the morning to bring to room temperature. Serve on individual salad plates at game time. Ummm... tasty tidbits!
